I love making soups, I used to get fussy about them and think I had to follow recipes or I'd screw something up, but then the folks I worked with opened my eyes, there are no rules for soup. It gets trickier when you don't use chicken stock I'll admit, but it's still no reason to be intimidated.

Potato Soup

1 tbsp oil
1 1/2 onions chopped (about 3-4 cups)
2 tsp salt
4 large potatoes cut into about 1/2" cubes (use something starchy, like russets)
2 carrots chopped
1 stalk celery chopped
4 c water
2 c non dairy milk
pepper to taste
1 tsp dried dill (1 tbsp fresh)

Heat the oil then dump in the onions and the salt, sweat the onions until they're soft and translucent.

Add in the potatoes, carrots, celery and water. Cover and let simmer until the potatoes are soft.

Remove from heat, and let sit until cool enough to puree. Pour it into a blender in small batches, or use a hand held blender, until smooth.

Add the milk, dill and pepper, return to heat. Serve when it's hot, but don't let it boil.

It was seriously a OMG what do I have in the house right now soup. I'm really happy that it turned out as well as it did XD.

That looks yum. The great thing about using russets is you don't need a thickener, because they're already so starchy, which I should probably put that in my recipe...
